Beer Chicken Chinese Recipe

Beer chicken – not very traditional but popular nonetheless
If you enjoy a nice hot curry and a beer to wash it down then this is the ideal dish for you since it combines both the spice and the beer. It’s usually pretty hot, but if you don’t like hot food then it’s equally delicious without chilli. It’s all down to personal taste.
You’ll need chicken, dried chilli, fresh ginger, garlic, spring onion, sugar, salt, soy sauce, cornflour and beer.
Marinate the chicken (in garlic, a tsp of cornflour, soy and a dash of beer).
Chop the garlic, chillis and spring onion small and the ginger into big slices so it’s easy to pick out later. Throw these into a little oil and heat until they begin to cook, then add the chicken to stir-fry.
Next add the soy sauce and a dash of sugar. After this, when any liquid has evaporated, add the salt, and then pour the beer on top (about 200ml will do) and heat it until the beer has also evaporated. You’re done!
You should have a nice spicy colourful stir fried chicken that tastes of beer. Delicious. Definitely something to eat with rice, would probably go down well on damp winter evenings.

Thanks for your message. Usually Chinese recipes don’t give very specific measurements, cooking is considered more of an art where you use your instinct. Just keep tasting the dish all the time as you make it (without eating it all) and start off by using less of each ingredient than you think is necessary – especially chilli. It’s more fun this way and you’ll learn very quickly.
On the other hand, many cookery books aimed at Westerners do try to give you a clear idea of how much to use – check out our reviews under the ‘books’ section or follow the links on the left through to amazon’s reccomendations. This is a safer way to do if you’re cooking for friends and need to get it right the first time!
